Pitta bread and corn tortilla ideas needed please!

Any meal or recipe suggestions for nice healthy dinners made with pitta breads or corn tortillas? (I seem to have ended up with loads and don't want to waste them).

I'm veggie and my partner is a big meat eater or ideas on both sides of the carnivore lines will be welcomed.

I'm already having low fat houmous and raw veg with the pittas for lunch.

    I made quesdadillas last nite with black beans, refried beans and just a little bit of cheese. Topped off with some salsa. It was super simple, tasty, and full of great fiber.....EASY being the key word! LOL!

    I made simple burritos with black beans, lettuce, salsa, lo-fat yogurt for sour cream (i cant ever find sour cream where i live) and home made tortillas. filling and healthy.

    you could bake the torillas then they go a bit like chips!
    I'm a big fan of the quesdilla (?!) but trying to stop my cheese fetish!

    I love quesadillas but I can't seem to stop myself going overboard with the cheese when I make them. My god, they are delicious though.

    What about pittas? Other than serving with houmous or stuffing them full of salad I'm coming up with nothing inspiring to do with them. :(

    You can use the pitas as a pizza crust and with your favorite pizza toppings. I am a big fan!

    I make a Chicken Nacho Bake

    cooked chicken breast
    topped with crumbled tortillas, salsa, cheese and sour cream
    top again with crumbled torillas and cheese

    bake 20 minutes until hot.

    calories can be high depending on type of cheese and sour cream but it is filling and can be a full meal.
