Superfood Spinach + Artichoke Dip

This is an excellent alternative to fatty spinach/artichoke dip and packed full of GREAT stuff!!


Ingredients:
10 ounce bag of fresh organic spinach*
1 can of artichoke hearts*, drained and chopped
1 can cannellini/white kidney beans*
3/4 cup nonfat, plain Greek yogurt* (LOVE Chobani for this!)
2 tbs fresh parmesan cheese, finely grated (optional)
¼ cup sun-dried tomatoes* (in oil), finely chopped
2-3 garlic cloves*, minced
¼ tsp dried thyme*
¼ tsp paprika*
1 tbs olive oil* (or use the oil from the tomatoes)
Sea salt to taste

Steam the spinach first. In a blender or food processor, puree all your ingredients except the artichokes, parmesan cheese and sun-dried tomatoes (you can blend the tomatoes, but I prefer them finely chopped). Transfer to a bowl and fold in the artichokes and sun-dried tomatoes. Sprinkle with parmesan cheese and season with sea salt to taste. I love to use this as a dip, but also as a spread for lining tortilla and kale wraps! Be creative and enjoy!
