Superfood Spinach + Artichoke Dip
Taken from: http://everydayglow.com/
This is an excellent alternative to fatty spinach/artichoke dip and packed full of GREAT stuff!!
Ingredients:
10 ounce bag of fresh organic spinach*
1 can of artichoke hearts*, drained and chopped
1 can cannellini/white kidney beans*
3/4 cup nonfat, plain Greek yogurt* (LOVE Chobani for this!)
2 tbs fresh parmesan cheese, finely grated (optional)
¼ cup sun-dried tomatoes* (in oil), finely chopped
2-3 garlic cloves*, minced
¼ tsp dried thyme*
¼ tsp paprika*
1 tbs olive oil* (or use the oil from the tomatoes)
Sea salt to taste
Steam the spinach first. In a blender or food processor, puree all your ingredients except the artichokes, parmesan cheese and sun-dried tomatoes (you can blend the tomatoes, but I prefer them finely chopped). Transfer to a bowl and fold in the artichokes and sun-dried tomatoes. Sprinkle with parmesan cheese and season with sea salt to taste. I love to use this as a dip, but also as a spread for lining tortilla and kale wraps! Be creative and enjoy!
* = Superfood. Every item in this recipe (ahem, except the parmesan cheese which is just delicious) is packed with nutrient dense goodness. Continue the superfood trend by serving this healthy dip with an assortment of colorful, antioxidant rich veggies.
