Scrambled Eggs Avocado
Ingredients
•8 eggs
•1/2 cup light sour cream
•1/2 teaspoon salt
•1/4 teaspoon pepper
•1 medium ripe avocado, peeled and cubed
•2 tablespoons butter
•6 bacon strips, cooked and crumbled
Directions
•In a bowl, beat eggs. Add sour cream, salt and pepper; stir in avocado. In a skillet over medium heat, melt butter. Add egg mixture; cook and stir gently until the eggs are completely set. Sprinkle with bacon. Yield: 6 servings.
Nutritional Facts 1 serving (1 each) equals 233 calories, 19 g fat (7 g saturated fat), 302 mg cholesterol, 434 mg sodium, 4 g carbohydrate, 1 g fiber, 12 g protein.
Banana Coconut Rolls
4 banana's
2 tbsps melted butter
2 tbsps lemon juice (lime juice works)
12 cup shredded coconut (unsweetened dried)
1Peel bananas and cut crosswise into halves.
2Place into a well-greased baking dish.
3Brush thoroughly with butter or margarine, then with lemon or lime juice.
4Sprinkle bananas with coconut.
5Bake in a moderate oven (375 degrees) 15 to 20 minutes, or until coconut is browned and bananas are tender -- easily pierced with a fork.
6Garnish with sliced pineapple, orange slices and cherries, if desired. Serve hot.
