Cheesy Zuchini Bites
These are so good! We had them as a side dish for dinner the other night, but they were posted on allrecipes as an appetizer. Also would be good in the summer when zuchini is abundant & cheap.
CHEESY ZUCHINI BITES
Original Recipe Yield 35 servings
Ingredients
5 medium zucchini
4 ounces shredded mozzarella
3 tablespoons grated Parmesan cheese
10 - 15 fresh basil leaves, torn in half if huge
1/2 tsp pepper
1/2 tsp salt
3 roma tomatoes, very thinly sliced
Cut zucchini into 3/4-in. slices. Using a melon baller or small spoon, scoop out the insides and discard, leaving the bottom intact. Place zucchini on an ungreased baking sheet; spoon 1/2 teaspoon mozzarella cheese into each. Combine Parmesan cheese, salt and pepper; sprinkle half over mozzarella cheese. Top each with a tomato slice; sprinkle with remaining Parmesan mixture.
Bake at 400 degrees F for 5-7 minutes or until cheese is melted. Serve warm.
One appetizer equals: 19 calories, 1 g fat (1 g saturated fat), 3 mg cholesterol, 58 mg sodium, 1 g carbohydrate, 0.55 g fiber, 1 g protein.

I just print out the recipes and save in a notebook (not bumping)
I would not discard the inside of the zuchini but just add some of the toppings to it as baked zuchini with lemon and garlic pepper on it is wonderful as well.

oops forgot to tell you where the basil goes! After you scoop out the inside a bit, and put your mozz cheese in there, sprinkle the parm mixture as directed. Then, place the basil leaf on there, THEN your slice of tomato. The rest of parm mixture gets sprinkled on after that.
As far as scooping out the inside, you kind of have to if you want to have a place for your mozz cheese. And you just scoop out SOME, not all of it. Seriously, a melon baller works pretty sweet, but a small paring knife will suffice.

You cut the zuchini into 3/4" chunks. DO not cut it lengthwise. One average size zuchini will give you about 8-10 of these. I hope that makes sense.0 -
