Chicken Pot Cupcakes~

* Prep Time: 20 min
* Total Time: 35 min
* Serving Size: 10 pot pie cupcakes


Ingredients

* 1 chicken breast, poached and diced
* 1 (14.5 oz) can cream of chicken soup
* 1 cup frozen mixed veggies
* 1 cup shredded cheddar cheese

* 1 Tbs Herbs De Provence
* 1 tsp onion powder
* 1 tsp garlic salt
* 2 (10 oz) cans Pillsbury biscuits


Directions

1. Preheat your oven to 400.
2. In a large bowl, combine the cooked chicken, cream of chicken soup, frozen veggies, cheese, herbs and spices.
3. Lightly grease a 12-cup muffin tin and place the Pillsbury biscuits into each cup, pressing into the bottom and up the sides.
4. Evenly spoon the pot pie mixture into each biscuit cup. Slide into the oven and bake for about 15 minutes. Check at the 12 minute mark.
5. Let rest for about 3 minutes and dig in!

    Those do look good. When I make a biscuit-topped "pot pie", I make my own white sauce rather than using a canned soup. And I don't put cheese in it, that seems odd. (I suppose making your own biscuit dough would be better, too, but I'm not that dedicated.) I like this idea though because you get the filling inside the biscuits.

    Here's a simple recipe for "Cream of....." soups. The canned ones typically are very high in sodium and have strange ingredients. They're fine in a pinch, but if you have the time, you're going to get a better flavor and a more natural product if you can make it yourself.

    You can make it your own...Use brocolli or mushrooms and a low fat cheese...My girlfriend used steak...these were not made for diet they were made for my 20 year old son...LOL
