    bump! sounds like what I make with zucchini, but I leave the insides and sprinkle with parmesan cheese and spray butter on the pan so it wont stick and bake until the cheese melts..

    So yummy!! I made these last night for dinner, even my "meat-and-potatoes-only" husband thought they were A-MA-ZING! Will definitely do these again. Next time I'm gonna try a little twist. After I scoop out the middle I'll marinate them in Italian dressing for a few hours. Then put them in the oven by themselves for about 5-7 minutes, take them out and proceede as originally directed. Thanks for the great recipe!
