So bored already!!

It's only been a few weeks but I am getting so bored with my grilled chicken, special k, yogurt, and lean cuisine diet (fruits and veggies included)

I'd like some meal ideas please!! Something, anything.. .meals or just a substitute..

also, any suggestions on things that keep in a lunch box good. I am a flight attendant and eat out of my lunch bag 3 days a week.. so it has to be easily stored..

    Pita pizzas are fun and yummy- Pita, sauce, cheese, etc.
    Breakfast wraps- Egg, chicken or turkey bacon (or regular bacon if you prefer), cheese, hot sauce.

    whole grain cheerios and (believe it or not) jumbo rice krispies!
    the krisipies are whole grain and only 90 calories for a cup! Those or the cheerios are totally delicious.

    Easy way to make chicken interesting is to use a bunch of different spices with it...just change it up a lot.
    Bake chicken breasts with some season salt, pepper, onion powder, garlic powder, and a little grated parm...tasty and simple.

    Or chicken parmigiana! you can baked the chicken breasts coated in any breadcrumbs and spices you like with any spaghetti sauce you want and serve with or without noodles.

    Or buy frozen fish! Fish sticks, grilled fish, breaded fish....all are low in calories.

    and a recent one I discovered! Onion and potato frozen pierogies! 3 of those babies are only 160 calories and go GREAT with frozen fish. You can boil, fry, sautee, or bake em!

    Tuna sandwiches are great too, or tuna casseroles. Theres plenty of things you can do with tuna!

    Potatoes are amazing, too. Very filling and work with any meat or veggies you desire.

    Have you tried Hummus ??? Laughing cow cheese (yummy) , Celery with peanut butter , You can make wraps with Cheese, non fat turkey meat, all veggies, Turkey burgers .

    Kashi cereal with fat free plain yogurt or almond milk..........wasa crackers with hummus.......cucumber or peppers with hummus........interesting salads with a TBS of non-creamy dressing....apples.....hard boiled eggs

    Check out the OMG salad thread. There were some great ideas for dinner salads. Lots of protien and greens!!

    When I get tired of the foods I am eating I change up something......like buy new bread, or a spread to go on toast.............

    Eggs can be scrambled with a million different things!

    these are two of my faves.

    I am addicted to crazy salads, I pretty much use cabbage instead of lettuce or spinach and that adds some crunch (which is what i love)
    examples of things i put in salads:
    various veggies but i love snap peas and green or red pepper
    craisins
    apples
    sunflower seeds
    pumpkin seeds
    walnuts
    chicken
    veggie ground round
    seared tuna
    cheese

    i have found some great low cal and low fat dressings- keep in the vinaigrette area and stay away from creamy ones and you should be ok.
    Everyone seems to love Asian Sesame mmmmmmm
    but i also put teryaki on a lot of things (including salad) and i love it!

    lots of different fruits for snacks
    I also love ricotta with splenda and cinnamon or vanilla or almond extract

    I make bean salads often that I never seem to tire of, and they are always popular with family & friends. Super easy to make and they travel well in a lunch bag. The best thing is you can change up the ingredients to suit your mood or what you happen to have on hand. Lots of fiber and other goodness from the beans and veggies.
    The one I make most often is kind of like a 'greek' bean salad:

    1 can black beans (or black soy beans)
    1 can garbanzo/chick peas (or kidney beans, or both!)
    chopped cucumber
    chopped red pepper (or yellow, or orange, or all of them)
    chopped red onion
    crumbled feta
    chopped olives (kalamata or green or both or none)
    balsamic dressing ( I favour Litehouse, you could use any you like or just olive oil, balsamic vinegar, lemon juice)

    Mix it all together and you're done.
    I LOVE feta stuffed jalapenos. If it's just going to be me eating this I sometimes chop up one or two of those, gives it a bit of a kick. Use whatever beans or combination you like.

    Another variation is your desired bean combo with chopped tomato, fresh cilantro, onion, olive oil, balsamic, fresh lemon juice.

    Add or leave out whatever flavours you wish. Beans are a good, filling base that will go well with almost anything.

    Pork is actually pretty low in calories. Grilled pork tenderloin is yummy. And don't forget about seafood. Shrimp is pretty low in cals too.

    Salads are a staple for me. I have them for lunch a couple of times a week. Also wraps for brown bagging it. Be sure to add a lot of veggies. I add peppercinis for added flavor.
  • I eat anything I want. I just am much more careful with my portion sizes. By not taking away any foods that I enjoy, I never feel deprived or bored with my food choices. It works for me and maybe it will work for you too. :happy:

    Today for dinner I had a Arnold Multi-Grain Sandwich thin with thinly sliced turkey breast (real turkey breast, not cold cuts), american cheese, lettuce, onion, mustard, pickles, and tomato. Ended up being about 350 calories, lots of good carbs, protein, and a little bit of good fats as well. Very good for dinner. And it took about 10 minutes to make from front to back.

    Added some whole wheat pretzel sticks for a side, and I was good to go with a perfect 450 calorie dinner that keeps you nice and full all night!
  • I alternate meats for dinner, beef, chicken, pork, no meat (bean soup), ground turkey. I cut off as much fat from the beef if it's sirloin and I get 97% lean ground beef. That way I don't get bored and my family doesn't either. I add brown rice, steamed zucchini, yellow squash, baby carrots, brocolli, whole wheat pastas and such for dinners. Natural peanut butter, apple slices, bananas, nectarines are good staples for lunches, tuna with low or nonfat mayo on whole wheat bread for a sandwich. I love Kashi GoLean Crunch cereal it has no high fructose corn syrup, high in fiber and protein with my nonfat milk.

    Make your chicken more interesting....chop it up into a Caesar or fruit salad. I love 4 oz grilled chicken, strawberrys, an apple, 1 oz of cashews, 1 oz of feta cheese and some raspberry viniagrette dressing.

    Also, keep in mind that you can continue eating regular food, just try switching out some bad ingredients for good ones, and of course portion control. Try ground turkey in place of anything you make with ground beef, try whole wheat pasta instead of white pasta for spaghetti (though I hate whole wheat pasta, so I eat white but just pay attention to serving sizes). Switch your sandwich bread for whole wheat bread, some lean turkey and some reduced fat cheese.

    Basically anything you want, just use healthier ingredients and eat what the recipe says is a serving size, not what heaping pile looks good on your plate (I think that's how most of us got here:happy: ). For lunches I like sandwiches, salads, and even leftovers from the night before.

    In all seriousness, there's 1000s of ways to make a daily salad. I usually use whatever leftovers are hanging around in my fridge, then jazz it up with fancy toppings - peppadews, capers, olives, cilantro, peppers, onions, cooked/chilled bacon pieces, feta, bleu crumbles, fresh ground pepper, spices, beets, watercress, what have you...Dressings are usually basic vinaigrettes or my new favorite (thanks to another MFP-er) of olive oil w/lemon juice and spices.

    I recently bought it and though I thought my meat dishes were good before, now I've learned all sorts of new tricks to make dinner taste better.

    If you are eating only lean cuts of meat, experiment with various types of fish. Saute it, grill it, bake it, and use lots of spice rubs and sauce reductions. Shallots are a nice ingredient to keep around for garnish and sauces.
