I am in the middle of baking Jillian micheals's recipe for blueberry banana muffins and realized that I am out of honey. Can I use applesauce instead?

applesauce actually acts like a binder because it is actually an oil/egg replacer. since the honey is there purely for flavor, you can add anything you'd like to sweeten it with.0
