Vegetable soup

i don't measure stuff and stuff
2 cans of chopped tomatoes 795 ml each low sodium
Then it's all about veggies or you can do this with fresh tomatoes trust me I am fresh tomato fan but canned makes this easy.
Sauté with 2 tbls olive oil
1 head of chopped garlic
1 onion chopped
I use carrots and celery that are in the fridge or shop, I did not have celery so bought and added lots with the leaves what else you gonna do with the leaves?
Knorr vegetable package, use this cause it is easy I have made this many times and in winter this is the way to go summer well we have gardens and fresh herbs
Half a cabbage
Juice of 1 lemon-this is the trick me thinks
I had cauliflower so used half a head
Green beans are yummy I bought a bunch they seem to stay crunchy in soup.

I think that is it other than chili peppers etc for personal spices etc.
I need advice on what to do with the other half of cabbage

    Calories don't know but to me it's healthy

    Sounds yummy to me!!!! Coleslaw with the other half of the cabbage or lightly steamed with some vinegar and black pepper ..... might even try it with some philadelphia cheese with garlic and herbs mixed in ...ooooooh now I am drooling!!!! LOL

    Here's my summer soup, so easy but delicious.

    Simply grate a couple of carrots and chop a couple of leeks. Heat 1 teaspoon (5mls) of olive oil in a pan and add the vegetables, let them soften for about 5-10minutes. Add your choice of stock ( I use knorr stock pots), season and simmer for about 45 minutes then enjoy. I don't count most vegetables so for me the only calories are in the oil and stock.

    so its carrots and leek in stock? sounds pretty unsatisfying...

    Sounds like a yummy, hearty soup! I like to just steam cabbage and eat it with a little spray butter and salt and pepper. Or slice it up thin and add to salads.

    It's actually very tasty and filling. Sometimes it's nice just to throw something together quickly rather than prepare lots of vegetables when you're in a hurry ( or hungry). Suggest you try it before you knock it.

    Hello, with the left over cabbage, I would chop it up and add carrots, peppers, green beans. cauliflower, broccoli, onion a veggie bouillon cube, a cup of water and a ton of curry and simmer until veggies are cooked! YUM
