    That looks great. Do you know roughly the calorie count? Not that it matters too much since I would still eat it anyways.

    sounds yummy, and so pretty too. I don't like avocados very much, but sweet potatoes I absolutely swoon over. Have to try this one!

    Calories, carbs, fat, protein - Does not include adobo pepper (I didn't have a can of those on hand) - I put down the recipe serves 4.

    Total: 1070 147 49 27
    Per Serving: 268 37 12 7

    Pretty good - I ate it over sauteed spinach and added some extra avocado to mine for lunch. Would have been better with the pepper I think... Or some cheddar cheese on top.

    yum! and so pretty! on saturday, i am making couscous with sweet potatoes, kidney beans and gorgonzola. after seeing the picture of this, i think i might be adding avocado as well.
