Cream Cheese S’mores

INGREDIENTS:
1/4 cup low-fat plain cream cheese
1 tbsp raw honey
2 tsp dark cocoa powder (70% cocoa or greater)
12 natural graham crackers (Try: Health Valley Organic Oat Bran Graham Crackers)
1 tbsp raw cacao nibs

INSTRUCTIONS:
Preheat broiler to high.
In a small bowl, combine cream cheese and honey; mix until smooth. Stir in cocoa powder and mix until almost completely blended, leaving a few white and brown streaks for presentation.
Spread about 1 1/2 tsp cream cheese mixture onto each graham cracker. Arrange crackers on a baking sheet and broil for 1 to 2 minutes, until warm and soft.
Remove crackers from oven and arrange on a serving platter. Sprinkle with cocoa nibs, dividing evenly, and serve warm. Enjoy open-faced or sandwich 2 crackers together for a more traditional treat.

They’re all rich in catechins, a type of flavonoid that has been found to help reduce blood pressure while lowering LDL (bad) cholesterol and increasing HDL (good).

Haven't tried, but it looks good.

    At least a couple of times a year, I curse the non-existence of graham crackers in Australia.

    I have tried to find something equivalent but nothing really measures up! I was ecstatic when a new friend who moved over here from the States last year got his mother to send him a care package... including some graham crackers. I'd been trying to imagine what they were like ever since reading Baby-sitter's Club. A group of us made s'mores that weekend and I giggled the entire way through. I think our only real option is to try to home-make them, if that's even possible.

    I use the Jacobs cream crackers instead of Graham. Not sure what graham ones are so I cannot compare, but "trickpie you should try the jacobs ones :)

    I just googled them and they look a lot like Saos? Grahams are different, they're a lot sweeter and more like an oat biscuit, I guess... I thinK? Oh man, my one graham experience is fading! NO!

    Also I like that I've hijacked this recipe thread to shed some light on the true despair that is felt in Australia on this subject.

    We don't have Graham crackers in the UK either!
    When my cousin visited from California, she made s'mores from digestive biscuits, do you have those? She said it wasn't quite the same though.
