Seeking substitution suggestions!

I am slowly trying to learn and incorporate substitutions in my cooking....like prune and apple puree or pumpkin instead of oil in brownie mixes, ect. I cook for myself and an incredibly picky eater. What are you doing in your home?

I've actually started substituting whole meals. Where I used to bring dinner leftovers for lunch, I started making salads. I've sought out entirely new recipes to incorporate into my menu but the main guiding principle I stick to is: if it doesn't taste good, I don't need to keep putting it into my mouth. There are plenty of healthy foods that are DELICIOUS. Those are the ones I will eat. Luckily, I like most fruits and vegetables so that helps a lot.0

Oh, I really like the puree suggestion in brownies- I've heard of using apple sauce and always meant to try it, but I haven't yet.. for some reason? LoL.. it's definitely on the list!!0
