Banana Protein Pancakes

I adapted this recipe from one created by Joe Ohrablo.
1/2 cup- Old Fashioned Oatmeal
1/2- Banana (mashed or cut into small pieces)
1- heaping scoop of plain Whey protein powder
1- Egg white (Another scoop of protein powder can be substituted. Just add 1/8 cup water with it)
2 -tsp. Almond butter (or peanut)
1/2 -tsp. Vanilla
1/4 -tsp. Cinnamon
1/4- tsp. Salt (optional)
Combine banana, powder, egg, butter, vanilla, cinnamon and salt. Mix very well. Add oats and stir. Let sit for 20 minutes so the oats can soften. Heat a pan on Medium and spray with cooking spray or wipe with Canola oil. It will stick like crazy if you don't. Add mixture to the pan and cook until little bubbles start to rise in the middle. Flip and cook about 2 minutes more. The pancake will get a little dark on top but it doesn't taste burnt or bitter.
This recipe tastes sooo close to banana bread! I eat them plain but I'm sure they'd be wonderful topped any way you'd like!
