Whats for dinner?

I so wish I didn't have to decide every night what was for dinner.....people give me some ideas. I have chicken breasts and lean ground beef in the fridge.

We had sloppy joes the other night (lean ground beef) and are having pheasant alfredo pizza tonight. I make out the weeks menu on friday night so I have my grocery list for the week(shop on saturday). You could do tacos or taco salads....or shredded chicken tacos or chicken salads for healthier options.0

Assuming you have the makings for a creative chicken pasta salad, you go do that! We had roasted asparagus and cherry tomatos with penne pasta salad. Had kalamata olives, EVOO, green onion, asparagus, cherry tomatoes, arugula, tricolor pasta with a dijon/lemon sauce (green onion, dijon, EVOO, honey and lemon juice whisked).0

last night I made chicken broccoli casserole
1 lb of chicken boneless skinless chicken breast
1 bag of frozen broccoli (mine was on the bigger size)
1 can of 98% fat free cream of mushroom soup
3 tablespoons light mayo
1 cup of shredded fat free cheddar cheese or you can use reduced fat
Boil the chicken. I seasoned it afterwards with some pepper, parsley and a little paprika. Cut it up into cubes. Mix the can of soup with the the mayo. Put the chicken and broccoli in a casserole dish and top with the soup/mayo mixture. Mix it altogether. Top with cheddar cheese.
Bake on 350 for about 20 minutes. Serves 4 but I'm sure you could get more servings out of it. I paired it with a salad.
I would recommend cooking the broccoli first unless you like a little bite to it.
Also...you can use any type of veggie. If you don't have cream of mushroom, you could always probably use cream of celery or cream of chicken.0 -
Thanks for all the tips....will save them for another night. Ended up baking the chicken breast with a little BBQ sauce on it, corn on the cob and green beans and diced tomatos.
It's so funny how I used to think I could never eat a meal without bread but now I don't even miss it.0
