Crockpot Spicy Lime Chicken
I made this up last night... it took no time at all, and was absolutely delicious!
Ingredients:
1-2 tsp oil
1 medium onion
3-4 cloves of garlic
3 boneless skinless chicken breasts
2 limes
2 cups low sodium chicken broth
red pepper flakes (to taste)
ground black pepper (to taste)
Directions:
1. Heat oil in a frying pan over medium high heat. Brown onions with garlic and some red pepper flakes until softened. Throw these in the bottom of the crockpot.
2. Put chicken on onions - I put mine in frozen.
3. Juice the 2 limes and pour this into the crockpot with the pulp too. Add chicken broth and more red pepper flakes and black pepper.
4. Cook on low for 4 hours. By this time the chicken should pretty much just fall apart and is so juicy.
5. OPTIONAL: Add about 1 cup of rice (to thicken the mixture), and continue to cook for another 30 minutes on low.
***I also thought this would taste great with some diced tomatoes and other veggies... but I didn't have any in the fridge.
Makes 4 servings.
When I put the ingredients into the recipe calculator it came out to about 200 cal per serving (but this would depend on the size of the chicken breasts you use for each serving).
