Looking for Quinoa recipe ideas!!

I am looking for some Quinoa recipes. I've never cooked with it before and would like to start incorporating it into my diet. I had a dish at a banquet several years ago made with Quinoa, corn, bell pepper and black beans. I can't remember what else was in it but it was really good. Would like to find a similar recipe and any others would be greatly appreciated!!

    The great thing about quinoa is that you can use it almost any way! I use it as a substitute for rice in lots of recipes... or as a sort of cereal like the one above :)
  • I made this last week. It was the first time I'd ever had quinoa actually. I thought it was really good! Makes for a really good light snack.

    I tend to use it as a rice replacement, I just put some in a rice cooker add twice the amount of water or stock as quinoa and leave it to cook, works a treat!
    You can always add veggies etc.

    I cook mine in chicken stock and add in parsley, golden raisins and toasted pine nuts. YUM!!! I also mix in salsa, black beans, scallions and top with chicken breast and cheese - my kids love it.

    Another breakfast recipe...Quinoa crunch is my favorite as a topping on greek yogurt and berries. Here's the recipe:

    Edit to say do not follow baking time on link! It will burn. Only bake for 10-15 min. Turn once.

    If you're looking for something super easy and quick, run to the store and pick up a box of Near East Taboule Wheat salad Mix.
    It's pretty clean and low cal, especially for coming out of a box. It's quinoa mixed with some spices, then you add lemon juice, a little olive oil, and chopped tomatoes.
    I literally just made some right now! I love it!

    Quinoa Pilaf with Shredded Chicken (on allrecipes.com) -- we skip the sage, use EVOO rather than coconut oil, and sometimes even omit the chicken. We love this, and it's so easy.

    I pulled this quinoa recipe off MFP earlier this year because I want to try quinoa and LOVE mac & cheese. I still haven't tried it, but hope to do so soon.

    Cooked two cups of dry quinoa with 3 cups of chicken broth. (If you're vegetarian, or don't have any, skip the broth, and just add water. Be sure to rise the lil guys off first well!)


    Let the quinoa cool for a bit. I put it in the fridge while I got the second part together.

    Chop up one leek
    Chop up one bell pepper (feel free to add more/less veggies)
    chop up and cook/strain 4 pieces of bacon (I used the real deal, but you can sub/omit)
    1 cup of soy milk (I used soy, but you can use rice/almond/real/whatever milk too!)
    2 eggs, beaten
    1 1/2 cups of shredded cheddar cheese (I used kraft cheddar with a touch of philly cream cheese)

    When Quinoa is cooled, add to the milk/egg/cheese/veggie mixture and fold in.

    Spray 9 X11 glass dish; spread mixture evenly.

    Bake at 350 for about 25-30 minutes (depending how golden brown you want it to be)

    slice into 8 pieces. 1/8th should yield about 206 calories.
