Mother's Day Brunch Ideas?

With Mother's Day this Sunday, I was wondering if anyone had any healthy but still yummy brunch ideas I can make mom without breaking my lifestyle change. I was thinking along the lines of something like pancakes/French toast/waffles but not as high in fat, etc as is traditionally made. Thanks! :)

    I just posted this recipe in the cottage cheese thread, and I can't get enough of it!!!! Sooo easy and simple. Banana Nut Protein Pancakes:

    1/2 cup rolled oats
    1/2 cup cottage cheese
    1/2 banana
    3 egg whites
    2 tbsp chopped walnuts
    1 tsp cinnamon
    dash of nutmeg
    1 tsp vanilla extract
    1 tbsp baking powder

    Blend everything but the nuts in your blender until smooth. Pour onto your skillet and sprinkle the nuts on top. Yummy!

    Eggless french toast. It is actually really yummy.

    1 part milk (whatever you got I used almond) 1 part orange juice, french bread.

    Mix milk and juice together, dip bread in. Spray pan or use butter and cook until brown on each side. It was really good.
  • HI there! I surprised my mother and grandmother with a mothers day brunch last year and am doing one again this year. I made a roasted vegetable frittata that was amazing and nutritious. This year I'm probably going to do another frittata with side dishes and a huge fruit salad so that I can nosh on that instead of things like bacon or fried potatoes.

    This sounds amazing, have you ever halved this receipe? Looks like it makes a lot
  • I haven't halved it but it heats up well for left overs over the following week too!
