Here's another that I make that we LOVE at our house (very filling too)!
Fiesta avocado Lime Rice
• 2 cups cooked long grain rice
• 2 avocados
• 1 large tomato, diced
• 1 large green onion, diced fine
• 2-4 tbsp chopped cilantro (to your liking)
• 1 tbsp fresh squeezed lime juice
• salt to taste
Large shrimp (I typically buy a small bag of frozen kind)
In a large bowl, combine hot rice, tomato, scallion, cilantro, lime juice and salt if needed. Toss and serve. Add a can of black beans and/or corn too if you want more flavor and substance.
Pan grill shrimp in pepper, salt and lime juice and serve over rice recipe0 -

Coconut milk
Blend until you like the consistency

A drop of Almond essence
Milk
sweetener or a cup of ripe fruit.
Blend until it is a thick shake...SO good!
for Savory:
3.Avocado pureed
Cilantro
Lime juice
Jalapeno slivers
Splash of Fish sauce
1/2 cup Shredded carrot or raw papaya for variety
mix it all up and serve
Makes a great Thai style spicy dip
Avocado, Mango and Tomato Salsa
1 mango - peeled, seeded and diced
1 avocado - peeled, pitted, and diced
4 medium tomatoes, diced
1 jalapeno pepper, seeded and minced
1/2 cup chopped fresh cilantro
3 cloves garlic, minced
1 teaspoon salt
2 tablespoons fresh lime juice
1/4 cup chopped red onion
3 tablespoons olive oil
In a medium bowl, combine the mango, avocado, tomatoes, jalapeno, cilantro, and garlic. Stir in the salt, lime juice, red onion, and olive oil. To blend the flavors, refrigerate for about 30 minutes before serving.0 -
I make Guacamole every week using the same simple recipe and I eat it on EVERYTHING! It's really good with Mary's Organic Gluten Free Crackers Here it is:
3 avocados - peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper (optional)
Directions
1.In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.0 -
Fresh uncooked kale
Avocado
Lemon juice (freshly squeezed)
Pull the kale off the stems and tear up like a salad. Cut up an avocado, and squeeze fresh lemon juice over kale and avocado. Mash around with hands to mix/massage it all together. Salt and pepper to taste. Let stand in fridge for 15 min-30 min. Eat like a salad. The lemon and avocado make a "dressing" and the kale breaks down a little so it is not so tough. I actually ate this for lunch today. It was yummy!0 -
Oh this is sooo Yummy!!
3 mashed avocados.
1 fresh garlic clove pressed
1 can rotel tomatoes drained
3 green onions minced
1 can mexicorn drained
fresh cilantro minced about 2 teaspoons
salt and pepper to taste
1 small can of green salsa verde (optional) or 1 can of diced green chiles
Mix all together and eat with tacos or with low carb chips as a snack. I eat it as a side with any meat dish. SOO SOOO YUMMY!!!0 -

I used whole wheat penne and added frozen peas as well as roasted chicken breast. It is so delicious and creamy!0 -
Hold on to your wig-
mash an avocado and a banana together.....add some raw dark cacao or just dark chocolate powder, add raw honey to taste.
put into a pudding bowl and cool in the refrigerator-

If you can afford around 400 calories:
Linquine with Guacamole
6 oz uncooked linquine
1 ripe avocado
2 tbsp lime juice
2 large cloves garlic
3 tbsp salsa
1 jalapeno pepper (if you want heat; if you don't, omit)
fresh cilantro to taste (I don't like cilantro so I don't use)
coarse salt and pepper to taste
Cook pasta according to directions to al dente.
In a food processor or blender add avocado, lime juice, garlic, salsa, jalapeno, cilantro, salt and pepper. Process until smooth. When pasta is ready, drain and place in large serving bowl. Add guacamole sauce and toss until pasta is well coated. Season with additional salt and pepper if desired.
Serves 2-3

Thai style crab stuffed avocado halves:
Based on 4 servings, 1/2 avocado per serving (Ideal for a starter/appetiser or double up serving for a main meal)
200 cals per half, 2g carbs
- 2 ripe avocados, halved and stones removed.
- 1 can white crab meat (shredded or chunks will be fine)
- 1 red chilli pepper, deseeded & chopped fine
- 2 spring onions (scallions/green onions) white & green part. Chopped fine.
- 1/2 tbsp lime juice
- 1 tbsp chopped fresh coriander (Cilantro)
- 1/2 tbsp chopped fresh basil (Thai sweet basil if you can source it).
- a good grind of fresh black pepper
Mix all the above ingredients together and stuff into the avocado 'holes'.
Served with salad (I like to use coleslaw mix dressed with thai dressing)0 -

Chocolate Avocado Pudding
2 ripe avocados
2 tsp. real vanilla extract
½ cup cocoa powder
½ cup maple syrup
¾ cup milk (coconut, almond, raw dairy... your preference)
1. Slice avocado in half, remove the pit, scoop out the fruit, and throw it in the blender with the other ingredients.
2. Blend until smooth. You may need to stop a couple of times and scrape down the sides. Add a bit more milk if necessary.
Variation Suggestions: add ½ - 1 tsp. (depending on your preference) of cinnamon, cayenne, or peanut butter. You could also substitute half of the vanilla extract with almond extract.
Serves 4 ( or 1 if your greedy)1 -
I had this at a restaurant the other day and it was absolutely delicious.. it was a starter but pretty filling so you could have it with both halves if you fancy a light meal.
Basically a bruschetta on an avocado: –
Take half an avocado.
Add finely chopped tomato, basic and onion in a vinaigrette. Place it into the middle where the stone was.
Cover with grated mozzarella.
Lace under the grill until browned.
Serve with a salad.

I guess I can add a recipe... it's all very imprecise.
1 avacado chopped
2 Tbsp very thinly sliced onions (I use regular yellow but I suppose any kind would be fine)
1 can of crab meat (or equivelent fresh)
Juice from half a lemon
Salt and pepper to taste (or not)
Toss ingredients together. Eat.0 -
Guacamole Deviled Eggs:
Make guac to your liking and include the egg yolks. Fill the egg whites as you would with deviled eggs. I had these for breakfasts a couple weeks ago. So good and filling!0 -

Here is one I am addicted too. I even put some on my black beans last night. If you like sour cream and guac, you will love this, especially at around 40 calories per serving. It is crazy good!
