Chilli Recipe

1.5 to 2 Hours cooking time. (in my opinion worth the wait! :)

2 tbls olive oil ( or any healthy oil you like to cook with)
400g Lean Minced Beef (as lean as you can get)
400g Tin of Tomatoes
3 cloves of Garlic chopped or minced
1 Med/Lrg Onion chopped
1 tbls Paprika
1 tsp hot chilli powder (more if you like it hot)
1 tbls cumin Seeds
1 tsp Truvia (stevia extract) (i now use this instead of Brown sugar)
500 ml Boulion beef stock (low in fat & sodium)
2 tbls tomato Puree
200g kidney beans (or any beans you like)
couple of dashes of worcester sauce
couple of dashes balsamic vinegar
Salt and black pepper to season as you like

Add 1 tbls oil to a pan and brown mince then set aside. In a saucepan add the other tbls of olive oil and gently fry onions, garlic, chilli powder, paprika, cumin seeds and sugar for about 10 mins. Add mince back in along with tomatoes, stock, tomato puree, worcester sauce & balsamic vinegar (you don't need to put these in but i love worcester sauce and find the vinegar helps the tomatoes) . Bring to boil, stir and then simmer for 1.5 to 2 hours depending on how reduced you like your sauce. Put kidney beans about half hour before the end of cooking and season.

I normaly serve with brown rice, jalapenos and half fat sour cream and if i am having a particularly bad day reduced fat cheddar cheese and tortilla chips.

    You have the key ingredients - vinegar, sugar, worcester! Sounds amazing. I may try it with black beans instead of kidney beans (because that's what I have in the pantry and I'm too lazy to run to the store)!

    I'm about to harvest my first bhut jolokia from my plant, gonna make chili with it, if it is edible I'll post a recipe too lol.

    I would try 1/2 & 1/2, gotta get that beef flavor somehow! I like the mexican diced tomatoes, they have chilies and onions in them for extra flavor. Chili is wayyy better the next day!
