Recipes for canned salmon?

Hi fellow MFP's!

I just picked up 2 cans of salmon, they were on sale and I know that fish is good for you :smile:
What else than salmon patties can I do with it? I thought maybe a pasta sauce or a casserole?

Any ideas/recipes welcome!

P.S. I tried to use the search function but that did not really help me :ohwell:

    Hi! Hope this helps
    Ingredients:

    1 can (approx. 7 ounces) salmon
    1 egg
    1/2 cup Italian bread crumbs
    1/2 tsp. salt
    1/2 tsp. pepper
    1 onion diced
    olive oil, enough to cover bottom of skillet

    Preparation:
    Remove skin and bones from salmon; drain well. In mixing bowl, combine with egg, bread crumbs, salt, pepper, and onion. Make patties about 2 inches in diameter; fry in oil until brown on both sides about 10 minutes.
    Sprinkle salmon patties with salt.

    You can roll it with some light cream cheese and cucumber/asparagus into SUSHI!

    Or you can crumble it on salad with lemon/dill dressing

    I have a recipe that is almost identical. I love it and even my kids eat it. Yum!

    Mix it with warm, roasted vegetables and a nice light vinaigrette.
    Pan fry with shaved potatoes and onions for a delicious hash.
    Salmon cakes made using your favorite crab cake recipe.
    Pesto pasta and salmon.

    My favorite:
    Mix with chopped avocado, white beans, arugula, a little olive oil and fresh cracked pepper and salt.
