mmmmm...my favorite is grilled chicken with onions, peppers, monterey jack cheese, and a fat free southwest ranch dip.
Or, turkey breast, mozzarella, and spinach with a basalmic vinagerette.

When I got my Panini maker I had one Panini a day for a month and put on 10lbs, so be careful with how many you eat.0

My favorite is some wholegrain bread with shaved turkey, cranberry relish and brie....really yummy!!0

Chicken Ceaser Panini
Ingredients
2 cups chopped cooked chicken breast
1/2 cup PHILADELPHIA Reduced Fat Italian Cheese & Herb Cooking Creme
1 green onion, sliced
1 tablespoon Light Grated Parmesan Cheese
1 tablespoon fresh lemon juice
8 slices multi-grain bread
4 small romaine lettuce leaves
1 tomato, cut into 8 thin slices
4 Light Mozzarella Cheese Slices
Directions
Spray grill pan with cooking spray; heat on medium heat. Combine first 5 ingredients.
Fill bread slices with chicken salad, lettuce, tomatoes and cheese to make 4 sandwiches.
Cook 3 min. on each side or until golden brown on both sides.

Grill red onion, portobello mushrooms, zucchini and egg plant if you like it, drizzled with olive oil and balsamic vinegar, then chop and toss with fresh basil. Place in panini with basil pesto and Asiago cheese. SOOOO freaking delicious!!!0

My favourite for dinner on the way home from the gym several nights a week when I lived in Paris - Chicken and Mustard Cream Sauce, can't recall if there was cheese in it as well, probably.0 -
Brie, apples and chicken with a touch of dijon, skip the mayo!
I also like turkey with roasted red peppers and any cheese!0 -
These were a big hit with my family. I served them along with a mixed fresh fruit salad. Enjoy!
Proscuitto & Smoked Gouda Panini
2 T olive oil
1 T balsamic vinegar
4 slices Italian bread
2 oz thinly sliced smoked Gouda cheese
2 oz very thinly sliced prosciutto
4 thin slices tomato
dash of salt and fresh ground pepper
Whisk oil and vinegar and brush on one side of each bread slice. Place slices, oil side down, on a work surface (I usually use a cookie sheet so I don't get my counter all messy) Evenly layer cheese, prosciutto and tomato. Sprinkle with salt and pepper. Cover with top halves (oil side up) and press gently to pack. Place sandwiches in grill for 3-4 min or until golden brown.0
