Non-Tofu Vegan Recipes

Does anyone have any great Non-tofu Vegan Recipes? I would love to hear them!

    Yes!!! A bunch... #1. Portabella Burgers - mmmmmm!
    portobello mushrooms
    tamari (low-sodium)
    Worchestershire sauce (vegetarian)
    Pepper
    red onion
    whole grain bun
    Hummus or Dijon Spread

    Preheat oven to 450º.
    Remove stems.
    Place the mushrooms face-up on a baking sheet.
    Splash a few drops of tamari and Worcestershire (beer splash is optional) into each cap.
    Place the stems into the caps.
    Cook in a casserole dish for 10–15 minutes, until the mushrooms are soft and filled with liquid.
    Cook the onions in a skillet.
    Place each mushroom on a toasted bun (w/ dijon or hummus). Top w/ onion, tomato, lettuce or spinach, etc

    You can also do these on the grill!

    Most of my fave (easy) vegan dishes come from this guy's book (The Engine 2 Diet). To be honest, I don't agree with the author - he's way too extreme in MY opinion. BUT, I love most the recipies, and got the book simply for that! :) He has both tofu and non-tofu choices. Good variety. You can totally tweak the recipies to work for you. For example, he doesn't believe in oil of ANY kind... I think that's rubbish. I like to use a good quality olive oil, or sometimes walnut oil or sesame oil... do what works for you! But he has some good ideas! :)

    I'm not vegan but can't have dairy, eggs, or soy but I do eat a lot of meatless meals.

    I love black bean burgers, there are quite a few good recipes floating around online

    I also love making rice bowls, basically i just make some rice then top it with things like corn, black beans, pico de gallo, avocados, the juice from the pico de gallo mixes through the rice and tastes like heaven.

    I found this one a few weeks ago and make it almost every day for lunch (and sometimes dinner). Ton of protein!
