Meatloaf!

So, since I've been making this for a while now and really it's one of my favorite meals, I thought I would share it. It's pretty healthy too, so there is no guilt in having more than 1 slice! :bigsmile:

Ingredients

1 pound lean ground beef
1 cup crushed corn flakes (any brand, usually takes about 3 cups un-crushed to make one cup crushed.)
1/3 cup finely chopped onion (I like to use Spanish or red onions.)
1/4 cup finely chopped red or green bell peppers
1 egg
1 tablespoon chopped parsley
3 teaspoons (or 1 tablespoon) Worcestershire sauce
A dash of nutmeg and pepper

Directions

Preheat oven to 400 degrees

Mix all the ingredients together. Make sure you coat the pan you're using with olive oil or cooking spray lightly on the bottom. Form the loaf and set into the pan. For the sauce, we just use about 1/4 cup of ketchup and a couple tablespoons of Worcestershire sauce, a little brown sugar, and a little bit of Heinz 57 sauce. (It's really your taste preference though!) Pour on the sauce so it's nice and thick, then set in the oven for 50-60 minutes.

We don't use salt because the first time I made it with salt it was just way too salty, and the second time I made it with none and it was delicious! We usually have this with homemade baked wedge fries and apple cinnamon muffins, sometimes sauteed broccoli florets as well! Hope you guys enjoy this as much as my family does. :heart:

    Try cottage loaf.....cottage cheese, beef bullion,corn flakes, nuts ,onions sauted in butter. cook in oven... its online...very good and no meat. i didnt think i would like this since i grew up on deer and elk, but its great! (you can really put anything in it to your taste) :love:

    Using 95% lean ground beef, divided between 4 people it comes out to 307 calories per serving, 27g carbs, 8g fat, 31g protein, 467mg sodium, 416mg potassium.

    Or, if you cut it into 8 slices it would come out to: 153 calories per slice, 14g carbs, 4g fat, 15g protein, 233mg sodium, 208mg potassium. :)

    We use Kellogg's corn flakes, Heinz ketchup and Heinz 57 sauce, and Lee & Perrin's Worcestershire Sauce. So the numbers may vary slightly if you changed brands, added things, etc. But it's easy to calculate if you use the recipe calculator on MFP. :)

    I found a neat tasty way to do meatloaf.

    1 lb lean hamburger
    1 package of stove top dressing (add water called for on box)

    Mix well

    Put in muffin tins to make small individual servings.

    Cook until done. (that's what my Grandma used to say to me).

    Leftover loaves can be frozen.
