Looking for easy, healthy recipes for chicken breast, talapia, flounder....

This one is great and I have made it with Tilapia or cod:
Grilled Tilapia with Honey and Jalapenos
1 lb. of Tilapia Filets
¼ Yellow Onion Chopped
Juice from 1 Fresh Lime
2 Garlic Cloves
1 Fresh Jalapeno Chopped Fine
1 Tsp Ground Ginger
¼ Cup of Honey
2 Tbsp Stir Fry Sauce
2 Tbsp of Low Sodium Soy Sauce
What to Do
Combine all the ingredients (except for the Tilapia) together to make a marinade
Place the Tilapia on a sheet of tin foil with the edges turned up
Pour the marinade over the fish and place in the refrigerator for about an hour (optional — I wanted quick and easy so I just went straight to the next step)
Preheat your grill and then place the tilapia (still in the tin foil) on the grill and cook until done (about 5-10 minutes)

We had this dish last night: Fish on leeks with tomato-topping (recipe serves 4)
4 fish filets (tilapia, cod, etc.) about 1 lb. total, fresh or thawed
6 stalks of leek
1/2 lb grape or cherry tomatoes
1/2 cup chopped fresh parsley
2 1/2 oz french fried onions
1 1/2 Tbsp oil (e.g. canola)
salt and pepper to taste
Directions
1. Cut ends off leeks and cut them in rings. Put the rings in colander and rinse off well. Heat oil in large pot and add leek. Add salt and pepper to taste and saute leeks till they are soft, about 10 min.
2. To prepare topping: quarter tomatoes (pieces will be small) and combine in a bowl with fresh parsley and fried onions.
3. To assemble lay out 4 pieces of aluminum foil, size about 12x15 inch. Divide leeks equally in the middle of each foil and lay fish on bed of leeks, season fish with salt and pepper. Top fish with tomato-parsley-onion-mixture. Cut another 4 pieces of aluminum foil the same size and put on top. Fold up all sides to seal packages.
4. Arrange packages on baking sheet and bake in pre-heated oven at 400°F for 40 min.
5. Take of top of foil packages and serve on foil with rice or potatoes. ENJOY!0 -

My all time favorite chicken marinade recipe:
his is my favorite marinade for chicken ...You can grill it outdoors, on the stove, counter top grill or cook it in the oven like I do
1/3 cup light sodium soya sauce
1 tablespoon lime juice ( i just use the juice of a entire lime so i don't waste it)
1 teaspoon of your favorite spice I use a heaping teaspoon of Mrs. Dash Garlic Blend
Salt and Pepper to taste ( i leave out the salt though )
Mix the marinade together and pour over chicken breasts and marinade up to 4 hours.
I cook a bunch up at a time and have for sandwiches, salads and with brown rice or bulger and veggies for dinner

As for the tilapia, flounder, or any fish, I make foil packets with them. I spray my foil sheet, add the fish, top with the jarred chopped garlic, add some freshly cracked black pepper, and top with thin lemon slices. I either grill them or bake them until done and serve with steamed veggies and rice. (yes, we love rice in my family LOL)0

4-6 chicken breasts
1/2 cup light peanut sauce
3/4 cup salsa
1/4 cup basil leaves, chopped
Put chicken breasts in baking dish, so that they cover the bottom. mix other ingredients together, pour over chicken. bake at 350F for 30-35 minutes.0 -
I made Parmesan Encrusted Tilapia for dinner last night
3 tsp of Wegman's Garlic/Cheese Finishing Butter (if not, can make your own with butter/garlic)
4 Tbsp of fresh grated parmesan cheese
1/4 cup Panko Bread Crumbs
Sea Salt
Pepper
Herb infused basting oil or Olive oil
Preheat oven to 350 degrees
Melt finishing butter in microwave for 20 seconds, pour into a dish, stir in parmesan and bread crumbs to make a paste.
Drizzle fish with basting or Olive oil
Spoon and coat parmesan mixture onto fish (which have been lined in a shallow baking dish)
Season with Sea salt/pepper.
Bake for 45 min.
Enjoy (This recipe was enough for 4 pieces of tilapia).0 -
Bruschetta Tilapia (from DVC website)
2 tablespoons Light tasting, extra virgin olive oil, divided
4 tilapia fillets, thawed
Juice of 1/2 lemon
salt & pepper
1 pint cherry tomatoes, diced
8-10 basil leaves, chopped
3 cloves garlic, minced
1 cup Vermont cheddar cheese (I use lowfat italian blend or mozzarella instead)
Instructions
Brush casserole dish with 1 tablespoon of olive oil.
Place fillets in the dish
Drizzle fillets with lemon juice
Sprinkle fillets with salt & pepper
Refrigerate until ready to bake
Add tomatoes, basil and garlic to a bowl
Add in 1 tablespoon olive oil (can more if needed)
Sprinkle with salt and pepper to taste
Refrigerate for at least an hour (overnight for maximum flavor)
Preheat oven to 350
Top fillets with tomato basil mixture
Bake for 20-25 minutes or until fish is flaky and tender
Remove from oven, sprinkle fish with cheese.
Place back into the oven just until cheese has melted.

Yield: 4 servings (serving size: 2 tacos)
Total:20 Minutes
Ingredients
1/4 cup reduced-fat sour cream
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
1 jalapeño pepper, seeded and chopped
1 cup thinly sliced white onion
1 1/2 teaspoons paprika
1 1/2 teaspoons brown sugar
1 teaspoon dried oregano
3/4 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon ground red pepper
4 (6-ounce) tilapia fillets
1 tablespoon canola oil
8 (6-inch) corn tortillas
1/2 ripe peeled avocado, thinly sliced
4 lime wedges
Preparation
1. Combine first 4 ingredients in a food processor; process until smooth. Combine jalapeño sauce and onion in a small bowl.
2. Combine paprika and next 6 ingredients (through ground red pepper); sprinkle evenly over fish. Heat oil in a large cast-iron skillet over medium-high heat. Add fish to pan; cook 3 minutes on each side or until desired degree of doneness.
3. Warm tortillas according to package directions. Divide fish, onion mixture, and avocado evenly among tortillas. Serve with lime wedges.

Ingredients:
1 lb tilapia fillets, rinsed and pat dried
1 tsp olive oil
1 small onion, chopped
4 garlic cloves, finely minced
2 jalapeño peppers, chopped (seeds removed for less heat)
2 cups diced tomatoes
1/4 cup fresh cilantro, chopped
3 tbsp lime juice
salt and pepper to taste
8 5-inch white corn tortillas (I used La Tortilla Factory Fiber & Flax)
1 medium haas avocado, sliced
lime wedges and cilantro for garnish
Directions:
Heat olive oil in a skillet. Sauté onion until translucent, then add garlic. Mix well.
Place tilapia on the skillet and cook until the flesh starts to flake. Add jalapeño peppers, tomatoes, cilantro and lime juice. Sauté over medium-high heat for about 5 minutes, breaking up the fish with the spoon to get everything mixed well; season to taste with salt and pepper.
Meanwhile, heat tortillas on a skillet a few minutes on each side to warm (no oil needed). Serve a little over 1/4 cup of fish on each warmed tortillas with a slice or 2 of avocado and enjoy!0 -

Dinner tonight
Thai Peanut Chicken
12oz Linguine or Fettuccine Noodles Cooked
2 cloves Garlic minced
2/3c Peanut Butter
1c Chicken Broth
1lb Boneless/Skinless Chicken breast cut into 1in cubes
1c Shredded Zucchini
1/3c Soy Sauce
1tsp Sugar
1 Red Pepper cut into thin strips
1tbsp lime or lemon juice
1c chopped Cilantro
Add garlic, peanut butter, broth, chicken, zucchini, soy sauce, red pepper and sugar to slow cooker. Stir to combine. Cook on low 4-5 hours or High 2-3 hours. A half hour before serving add cilantro and lime juice. Serve over noodles.
Dinner Last night
Honey Soy Tilapia
3tbsp Honey
3tbsp Soy Sauce
3tbsp Balsamic Vinegar
1tbsp minced Garlic
6 Tilapia Filets
1tsp Black Pepper
Mix honey, soy, balsamic vinegar and garlic together in a bowl. Place filets in the mixture and allow to marinate in refrigerator at least 30 minutes.
Preheat oven to 350. Spray dish with cooking spray or line with foil. Place filets on prepared sheet and sprinkle with black pepper. Bake until fish flakes easily with fork. Approx. 15 mins.
Chicken Asparagus Bake
1 lb Asparagus- Steamed
24oz Pasta – Cooked
1/4c Olive Oil
1 lb Chicken Breast- Cubed and Cooked
1/2c Shredded Cheese
Heat oven to 350. Combine all ingredients together. Place in 13x9 pan. Bake for 10 mins.0
