If you love sweet potatoes
My mother-in-law just mailed me a recipe that I ended up making that night: Sweet Potato and Black Bean Burritos
-Large sweet potato
-Half of a red onion
-Olive oil
-One can organic (or low sodium) black beans, rinsed
-1tbsp of chipotle peppers in adobo sauce (usually found in the Mexican section)
-One small bunch of spinach
-Large flour tortillas
-6oz. shredded monterrey jack cheese
Cut a large sweet potato and half a red onion in chunks.
Combine in large pan with olive oil. Cover for 10-12 minute but stir occasionally, until softened.
Add one can of black beans and 1 tbsp of chipotle peppers in adobo sauce.
Mix for 2 minutes.
Add a small bunch of coarsely chopped spinach.
Let cook for another two minutes.
Divide among five large flour tortillas. Divide 6 oz. shredded Monterrey jack cheese between each shell.
Roll burrito style and cook in pan, approximately 3 minutes on each side.
Obviously you can add whatever else you want and spices. It's great. We made it last night. Grilling the burritos in the reheated pan was an especially nice touch. I saved the rest in the refrigerator and they were great the next day.
This is inexpensive too. I don't have a nutrition profile for them but I feel confident saying you're safe with these: healthy fats, fiber, low cholesterol, high protein, beta-carotene, and folic acid! What an awesome dinner or lunch!

I will tell you that I think any food item referred to as a "loaf" is a bit off-putting. However, the fact that these were made with turkey, also spicey, and made in mini sizes compelled me to try it. It's now a staple in my house.0 -
