New ways to have vegies?

What are some new ways to make vegges interesting and tasty? I am eating clean and struggling to think of inventive ideas.

    I buy stir fry veggies frozen, steam them, top with chicken breast & mango salsa, Yummy

    Or get eggplant, steam, squeeze out the water, slather with lemon, chill and eat cold like a salad.

    Toss with a bit of olive oil and basil and throw them on the grill!
  • my newest fave is bok choy! I saute it with some soy sauce and a teeny bit of teriyaki marinade, toss in some fresh garlic, and its AWESOME!

    Tonight for dinner I made pasta salad, but tried new veggies. We did cauliflower(steamed for a short amount - not fully cooked), peas, tomatoes, shredded carrots, red onion, the tri-colored pasta, and a small amount of black olives. With some zesty italian on it and some corn on the cob, I still came in under my calories and that was with having chocolate chip pancakes for lunch. ;)

    Check out vegan websites for lots of delish veg ideas. I went vegan last june and as long as you don't make up for lack of meat with tons of pasta, its excellent and very healthy! I'm loving it! :)

    I make delicious veggies on the grill. I'm making some tonight actually.

    I'm using cut up squash, whole baby mushrooms, diced onions, cherry tomatoes,and zuchinni. Take aluminum foil and make a pouch and put all the veggies in except the cherry tomatoes and then add some italian dressing. Grill and flip for about 10-15 minutes, open the pouch and add the tomatoes and then they are ready to eat :smile: Sooo good!

    I've been trying to include more vegies too. I know you can eat them raw but Im thinking of half cooking a heap of them at the weekend and taking them to work for lunch and eating them cold as a snack! That should work, shouldnt it?
