I'm going to be making a chinese type meal in my crockpot.. chicken cubes (or beef), broccoli, carrots, and mushrooms with watered down soy sauce.. I don't want to use rice with it.. any healthy ideas for it??

After its all cooked, use lettuce leaves and make the chinese part into Lettuce Wraps! Yummy0

I use organic chicken stock for my Asian crock pot meals regardless of the protein source. I usually lightly dust the meat in corn starch or rice flour and brown it a little peanut oil before adding to the crock. It helps to thicken the sauce. My favorite veggies are bok choy, leeks and carrots and tons of garlic!!! Look into shiratki noodles as a low-carb base to serve it over.0
