Some good vegetarian recipies for a curious carnivore?

Hi everyone! I'm considering trying out the vegetarian thing, just to see how it suits me. I do love meat, but I'm wondering if there are some awesome recipes out there that I might be able to try! Does anyone have any recipe suggestions for a beginner, or could you recommend any websites? Thanks!!

    We eat quite a lot of vegetarian food just because it's cheap and healthy. My sister told me a good idea which is cut an aubergine in half, scoop the flesh out and fry it up with whatever veg you have e.g. spinach (frozen is fine), mushrooms, onion, tomato and put the skin in the oven. Then put the mix back in the skin and put some cheese on top. 10g of cheese is enough. Can easily be under 200 calories.

    Also http://www.bbcgoodfood.com/recipes/1364/spicy-root-and-lentil-casserole is great and you can lower the calories with spray oil.

    Stir fry with tofu?

    chick pea curry is good- tin of chick peas, tin of tomatoes, onion and you can add other veg like spinach or mushrooms too. Put some garlic in and curry powder and other spices, cumin seeds are good. under 300 calories for half the recipe which is loads or you could have 1/4 and some rice.

    My favorite cookbooks are "How to Cook Everything Vegetarian" by Mark Bittman (bonus: he indicates which can be made ahead and which take 30 minutes or less to prepare) and "The Complete Italian Vegetarian Cookbook" by Jack Bishop. I don't usually follow recipes when I cook, otherwise I would post some, but when I do want to try something new I go to one of those. The Mark Bittman book especially is fantastic and it's like 20 bucks on amazon.
