Butternut Squash

Wondering what you guys do with this?

generally i just spray oil over, sprinkle paprika and bake it like chips

....but i fancy something different!

Ideas/Suggestions welcome!

    I didn't know you could bake it like chips! What do you set the oven at and how long?!? Maybe some cinnamon on them would be good!

    I like cutting it into cubes and using it in a vegetable curry, or making it into soup with some coconut milk and ginger : )

    My mum makes an amazing soup with it - butternut squash, carrot and potato soup :smile:

    She's also added red peppers to it as well which is nice :smile:

    Leave some of your roasted pieces un-paprika'd, cut them into cubes and mix with cubes of feta, chopped mint and parsley and some pine nuts with cous cous.

    For the BNS chips;

    cut into chunky chips, spray with low cal oil and sprinkle with paprika. add to baking tray

    set oven at 180
    bake for 25 minutes>turn>bake for another 25minutes

    bing bang bosch! delicious!

    You could also boil it until it is soft and mash it (with or without butter - up to you. I do it without). You can even mash it together with a single boiled potato if you wanted to give it extra texture/flavour. From there you can either eat the mash as it is, or you can make little pumpkin patties (you can add an egg if you want) and pan fry with a tiny amout of oil. From there you can either eat the patties as is or you can make some stacks out of them by alternating pumpkin patty with some herbed yoghurt. The stack works also for potato and/or sweet potato patties too.
