crockpot salsa chicken
Ingredients:
4 boneless skinless chicken breasts
1 cup salsa
1 packet taco seasoning
1 can condensed cheddar soup
1 can black beans
Place chicken breasts in crock pot
Sprinkle taco seasoning over chicken
Pour salsa and soup over chicken
Cook on low for 8 hours, during the last hour add the black beans
1 serving = 1 chicken breast
Calories: 280 Fat: 7 Protein: 35
In the picture I just took out the chicken breast, put a little cheese on top and ate it like that but It comes out very soupy so there are a ton of things you can do with it! You can put it over brown rice, shred the chicken and eat it like soup, use it for chicken burritos, ect. I used cheddar cheese soup just because that's what I had on hand but it can be substituted for reduced fat cream of chicken soup.

I recently made a recipe similar to this. It didn't have black beans and it called for cream of mushroom soup instead of cheddar. It was amazing. I shredded it and put it over 2 hard taco shells and lettuce and made a taco salad. My husband loved it too.0

I make one similar to this...
2 cans low sodium black beans
1 can low sodium corn
1 jar Newman's Mango Salsa
3-4 chicken breasts
I put the breasts in the crockpot and pour the other items over them. Then cook on low for 8 hours or so...I put it in when I leave for work at 7:45 and turn it to warm when I get home at 5:30.0 -
Just put this in my crockpot this morning before work. Cant wait to go home and try it. :-)0
