New recipe for anyone who loves shrimp!

I don't know if this is a "new" recipe, but its new to me, and I love it, so I figured I should share! Its shrimp with mangos & sun dried tomatoes. Heres the recipe -

10 jumbo shrimp - raw
2 tbsp EVOO
salt & pepper to taste
1 mango, cut up into squares
2 tbsp sun dried tomatoes
1 tbsp chopped fresh basil


Pre heat your oven to 450. Lay out the raw shrimp on a cookie sheet. Cover them with the EVOO, salt and pepper. Cook in the oven for 5-8 minutes depending on the size of your shrimp.
Take them off the cookie sheet and put them on a plate with a paper towel to drain. Wait till they cool.
Cut the mango up into small bite size squares.
Cut the cooled shrimp into thirds (cut off the tail and then cut the body in half).
Combine with the basil and split into to bowls - this is enough for two people.


This is a great light meal, or you can put it over polenta and enjoy!!!

    Yum!! Thanks for this. I'm making a "clean eating" version of Shrimp Kung Pao (broccoli slaw instead of noodles) and Quinoa for supper tonight.
    I'm always looking for easy but tasty shrimp recipes and I'll definitely be making this one too :)
