Whole Wheat Spaghetti Aglio e Oglio (Garlic and Oil)
An Italian Family Tradition! ( Except growing up my Mom didn't make it with whole wheat pasta!!)
INGREDIENTS
3 cloves of garlic
16 tablespoons extra virgin olive oil
Salt
Red Chile Flakes
350 g (12 oz) dried Whole Wheat Spaghetti
Parmesan cheese (optional)
DIRECTIONS
Bring a large pan of salted water to the boil and cook pasta al dente (tender but firm to the bite).
Meanwhile put oil in a little saucepan with sliced garlic and chilli flakes; cook very gently until golden, stirring. Add a little bit of water. Do not let the garlic become too brown or it will taste bitter. Simmer for some minutes.
Drain the pasta and toss with chilli and garlic oil (add parmesan cheese if you'd like)
Serves 4

You can also add some asparagus cut into small peices to the garlic oil, to get some veggies in there!

Just wanted to share with everyone a version of this I made tonight - super yummy!
3-4 diced Roma or plum tomatoes (or any tomato you have will work)
2 tbl Olive Oil
Minced garlic - enough to suit your taste
Saute all three until the tomatos are soft and garlic is browned.
Serve over whole wheat spaghetti.
