Protein Cinnamon Muffins
I just came across this recipe on pinterest and thought it sounds so good so thought I'd share. I put into recipe builder and come up with following: 110 cals / 8 carbs / 7 g fat / 7 g protein / 2 g sugar (serves 12 as that's how many muffins the recipe makes)
Topping:
1/3 cup Stevia (Truvia)
2 TBS cinnamon
Muffin:
1 1/2 cups Almond Flour
2 scoops Vanilla Protein Powder
1 tsp Baking soda
1 tsp salt
1/3 cup Stevia (Truvia)
2 eggs whites
1 cup Almond milk
1/3 cup unsweetened applesauce
5 ounces Plain Greek Yogurt
1 TBS Baking powder
Instructions:
Preheat oven 350 F. Combine topping mix in small bowl. Mix. In separate medium sized bowl blend dry ingredients (muffin). Add egg whites, applesauce, Almond milk, and yogurt.
Use mixer to blend all ingredients well. Spray muffin pan with non-stick spray or EVOO.
Pour in mix. Fill each muffin slot 3/4 of the way full. Cover the top of each muffin with topping mixture. Use a toothpick to swirl in the mixture.
Bake 25 minutes or until toothpick test is clean.
**Note: do not use paper cupcake sleeves. Muffins will stick. Use none or silicone sleeves.

Sounds good. Might put a few chunks of apple through the mix too. Can't ever go wrong with the apple and cinnamon combo!0
