Cheesy Pesto Chicken
I got this recipe off of allrecipes.com and loved it! I make it every few weeks. I've modified it a little bit from the original recipe.
INGREDIENTS (Nutrition)
4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
1 cup prepared basil pesto (in the grocery there is a pesto sauce near the spaghetti sauce - I think the brand name is Classico)
Shredded Mozzerella Cheese (2%)
Salt
Pepper
Garlic
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
Flatten chicken
Salt, Pepper, and Garlic both sides of the chicken
Add 1 tablespoon of the pesto sauce onto each flattened chicken breast. Add some shredded mozzerella cheese. Roll up tightly and secure with toothpicks. You can add another tbsp of pesto sauce and cheese to the rolled chicken breast or you can cook as is.
Bake uncovered for 45 to 50 minutes in the preheated oven, until chicken is nicely browned and juices run clear.

Sounds yummy but pesto and cheese are not exactly low calorie :happy:
And a cup of pesto is a lot. But olive oil is good for you .... so I could justify this...0 -

Here is what I figure the nutritional value is. This is based on 6 oz piece of chicken, 2 tbsp of classico basil pesto, 1/4 cup 2% shredded mozz cheese. To make it lower fat / calories you could use ff cheese and 1 tbsp pesto (1 tbsp of pesto I think is enough). I personally don't like the way ff cheese tastes so I use 2%.

Calories - 365 Calories - 307.5
Carbs - 3 Carbs - 1.5
Fat - 17 Fat - 11.5
Protein - 46 Protein - 45
Fiber - 1 Fiber - .5
Sugar - 1 Sugar - .5
