Mr Spaghetti Squash is bored

So... Mr Spaghetti Squash is humongous and yellow. He's been sitting on my counter for almost a week now. I seriously don't know what to do with him, how to tackle him, or just how to approach and start the dialogue...

How on earth do I prepare that thing? How do I season? What to eat it with?

All ideas welcome :)

    i love spaghetti squash.. cut it in half and scoop out the seeds. put some water on a cookie sheet and lay the spagetti squash upside down on it ..bake at 350 for about 20 minutes.... after it cools slightly, take a fork and scrape the squash portion ..it literally comes out looking like spagetti

    you can have it with whwatever you want .i use spagetti sauce sometimes...sometimes i just add salsa ..i made lasagna with it once and it turned out pretty good

    one time i made a cold salad with it , adding some balsamic vinegar, olive oil , fresh garlic, salsa, italian seasoning , onion, red bell pepper ..it was awesome as a cold salad!!!

    Yep, google it for recipes. I do whatmaryjay51 does to cook it, then I normally serve with a little oil and garlic. Delicious!!

    I have always wanted to try spaghetti squash as an alternative to pasta. But that is awesome that it can be used in lasagna. I will definitely have to try that!

    I normally eat it with spaghetti sauce and some parmesean cheese, and you can cook it like above or if you have less patience (like me :tongue: ) then you can microwave it in a glass bowl with some water on the bottom for 8-10 minutes per half. So if you're only making one half right now it saves time.

    Also you could use it with low fat alfredo, or make it into a cold pasta salad. I like mine with light italian dressing, peppers, cucumbers, and broccoli.

    PS: My husband likes his with a little bit of butter, splenda and cinnamon. It makes it a sweet treat rather than savory :smile:

    There is a thread for spaghetti squash au gratin. I made it the other day and it was awesome. I highly recommend it.

    Bake it the way that maryjay51 said to and then what I do is add a bit of butter and parmesan, salt and pepper to taste and just have it like that. The stuff is pretty awesome. I've never actually tried it with spaghetti sauce. Maybe I should....

    I'm lazy and here is a secret: you can also roast the squash whole, as long as you remember to poke holes in it w/ a fork first!
    And be very careful when you're cutting, removing the center guck and scraping the strands.

    I saute garlic in olive oil, throw the squash strands and toss. I also like to add red pepper flakes, lemon juice, parsley and some bread crumbs. You can also add parm, etc. - as if you were eating a baked spaghetti type dish.

    I'm sure it sounds plain, but I like it . The roasting give the squash a good flavor.

    I have made it once & I prepared it the way that Maryjay said. I tried it with alfredo sauce (not the best to me) and then with spaghetti sauce & I LOVED it w/ spaghetti sauce. It made a lot & I read that you can freeze it also. I ended up having to throw some of it out because I didn't freeze it in time.

    I eat spagetti squash every day. I use it in the place of any pasta or potato dish. If I want a spagetti dish, I will use a fork to pull it out after it is cooked If I make potatoe salad, I will cube it after it is cooked.

    I had some last night for dinner. I cut it in half, scooped the seeds out, place half of it in a dish with water, cover with plastic wrap, and microwave for 15 min. Then I scoop out my "spaghetti", add sauce, parmesean cheese and eat. yummy.

    Thanks!!!! I'll try something tonight! Just wondering if it freezes well once cooked, or if the uncooked half can survive a few days in the fridge. Because if I cook the entire thing I may be eating spaghetti squash for a while.

    I cut it in half length wise, scrape out the seeds, use my fingers to put just a little olive oil on it, season with salt and pepper and stick in the over on 350. I find it usually needs more than 20 minutes, but u also buy huge ones. I use it in place of spaghetti. I tried it in a spaghetti pie earlier this year and LOVED it, I made 2 and gave one to a co-worker and she thought it was ah-mazing too.

    Prepare much like they have mentioned above, but then I've used it in a ton of recipes. You can add ANY of the normal sauces, alfredo with seared shrimp, marinara, pesto, by itself with olive oil and sea salt, made into a kinda pasta salad with olives, tomatoes, and italian dressing, and many more. Anywhere you would think of using pasta, you can substitute spaghetti squash. I often even use the half shells as bowls and just fork out a bunch of strands and pour my sauce right inside the shell. One large squash made more than enough for me and my wife to eat on it for a couple days.

    Bake it as per the instructions in the first post.

    In a frying pan, using a minimum of olive oil, cook up 2 sliced zuchinni, and 1 cup of eggplant cubes. When they start getting soft, add 1 cup of canned cubed tomatoes and cook until all veggies are soft. Add the spaghetti squash and cook in the pan juices for 5 minutes, letting the strands absorb the juice. Season with salt and pepper to taste. Serve. Yum!
  • I bake it like most people suggested. Then I roast some vege's (mushrooms, red peppers, zucchini) and serve it with pasta sauce and goats cheese. I love it :)

    Love Spaghetti squash... some of the different ways I enjoy it

    1. salt, pepper, a little butter and a little parmesan cheese
    2. with spaghetti sauce
    3. stir fry with other veggies
    4. with a mushroom and walnut cream sauce. really love it with morels but any mushroom will work, take a cup of water add 1/2 cup of cream( I use almond milk instead), 1 Tbs of soy sauce, toss in your mushrooms ( I also add a little bit of onion) and reduce it down to 1/2 cup, pour it over your cooked squash and toss on some chopped walnuts. The sauce is enough for one small spaghetti squash.
