Chicken and Pineapple Quesadilla! 285 calories
I made this today and it was so delicious! Very filling, too!
Ingredients:
2 corn tortillas - 100 cals
2 oz grilled chicken breast (I already had some in the fridge, so I didn't need to cook it)- 60 cals
.5 cup diced pineapple - 35 cals
.5 cup FF mozzarella - 90 cals
Saute the pineapple in Pam in a pan over medium heat until slighty browned. Toss the chicken in with it, as well, so it gets heated. Remove from the pan.
Spray one corn tortilla w/ Pam and saute on both sides until it looks nice and toasted. Saute the other tortilla on one side, then flip it. Sprinkle the cheese on top, then top with pineapple and chicken (I sprinkled with salt, too, at this point). Place the other tortilla on top and leave on until cheese is nice and melty, flipping about halfway through. Remove from pan, cut into yummy quesadilla triangles and DEVOUR Dip in BBQ sauce if your heart desires.
Totals: 285 calories, 1 g fat, 34 g carbs (3 g fiber), 34 g protein!
