Lots. garlic, ginger, coriander with maybe some spring onions (salad onions) and maybe even mushrooms to go a long with the fish.

Tarragon is lovely with white fish, I add the tarragon and maybe some vegetables (onions, salad onions, mushrooms, sweetcorn, mixed salad peppers etc) in a pot with some low fat single cream, or quark (very low fat), coarse black pepper and a maggi cube. Heat it up, once it starts to boil bring it to a simmer and then add your fish and leave to technically steam (put the lid on), about 5-10 mins depending on the thickness of your fish, it's done. Serve with rice and more veggies.

Lemon pepper and dill are both good.

I love dill & lemon juice (you can buy lemon pepper) but other herbs work just as well, also I'd say it depends on the fish. Yesterday I had salmon (although over baked) and I added some fennel (fresh the whispy bits) and it was really nice.

Depending on the fish, dill, tarragon, basil, rosemary, ginger, garlic (fresh/granules/salt), ground cardamom, lemongrass, nutmeg(on either very bland or very strongly-flavoured fish). I often do sea bass with a rosemary, garlic, olive oil and lemon zest crust, salmon with fresh ginger and cardamom, or poached white fish with coconut or coconut milk, cinnamon/nutmeg and banana or almond slices, and maybe a tiny pinch of chilli if I'm in the mood for spicing things up a touch.
