Stuffed Peppers

I tried out a new recipe tonight that I had found on pintrest, and it turned out SO good! Pretty low calorie too!

Changes I made:

Red onion instead of scallions
I put a little bit more tomato sauce into the mix, and next time I would add even more
Put1/2 tablespoon of tomato sauce on top of each stuffed pepper
15 minutes before they were finished I added some cheese on top

With the cheese, each half pepper worked out to be 160 calories.

    I mak ea very similar recipe but mine are about 250-260 calories. How do you get yours to only 160 with the cheese? I LOVE stuffed peppers!!!

    Mmm now I know exactly what to do with all those peppers I have leftover from the weekend!

    I've been looking for a good stuffed pepper recipe! I dont have quinoa and have never even had it, substitue for just brown rice?

    I substitute lean ground turkey, quinoa and lighten up on the cheese a little. They come out to around 430 calories for a whole stuffed pepper but one pepper is enough for dinner. I cook the quinoa in chicken broth for some added flavor. So delicious!

    Also highly recommend trying quinoa if you haven't already, it's so good.

    Yeah i would think that would be fine too
