Tortilla Casserole

Great served with salad and chicken...I shop at trader joes...:)...

Corn Tortillas - Trader Joe's, 1 container (12 tortillas)
Trader Joe's - Fancy Shredded Mexican Blend Cheese, 1 container (3 cup)
Trader Joe's - Salsa Verde, 1 container (12oz)
Beans Pinto - 2 cups cooked (I really prefer the flavor/texture of beans made at home)

Layer these in a 9X13 dish, beginning with some salsa, and ending with tortillas, salsa and topped with cheese.
Bake, covered with foil, in a 350 degree oven until hot and bubbly, about 30 min.

12 servings in a dish, per serving:
211 calories...20 grams carbs...10 grams of fat...9 grams of protein...540mg sodium...37mg calcium

    I am going to try this tonight. Since it is hard for me to picture, would it be good to add some tomatoes, lettuce (or spinach for me), squirt of lime juice and maybe some avacados on top after you pull it from the oven? hhhmmm thinking...sounds great, thanks for the idea.

    heck, throw the chicken right into the dish. sounds tasty.

    I would also add cumin, paprika, oregano, 1 teaspoon of each.

    My mom used to make this sort of thing growing up :)

    Yes, you can dress it up! Or just keep it simple... tastes great either way...depends on what you have in the fridge and how much time you have etc...:)

    Exactly!! It is such a mom food, comfort casserole. I have little ones, who like things just in their elemental state, usually! But spices would be delicious!

    Yes, and you could use ground beef, or shredded beef....if you are inclined or have time! I have a personal dislike of meat left over, for some reason...gets a taste only I seem to taste...I keep my meats separate...

    Sorry, all,

    I need to edit this recipe...
    ...add I C water to the salsa...because those tortillas are "thirsty" and become very absorbant...makes a nice dish, though...sorry for the omission (sp)!

    I made a similar recipe a few weeks ago. If you aren't a fan of the soft (mine got mushy) tortilla, you can bake it and crumble a few Tortilla Chips in near the end, in place of tortilla.
