Edible flowers?

I'm thinking about starting an edible flower garden, but I can't find out much nutritional information out about them online. Does anyone know anything about edible flowers? :flowerforyou:
I'd love to make flower salads and eat them in the countryside.............. like a unicorn

I could be wrong, but i thought specific flowers were just dipped in a sugary syrup then dried . Eating a whole bowl might not be the best idea
