Need Banana Bread Recipe

I would love a banana bread recipe that is low fat and healthy. I have my mom's recipe but of course that is fattening. My husband loves making emeril's recipe which is fattening as well.
I would prefer one that is not wheat as I have had wheat banana bread before and it didn't taste very good.

I have not tried this recipe, but I found it on recipezarr.com. I love this website because it shows the nutrition fact in the left-hand column. This recipe is just one of many low-fat ones on here.
Low-fat, sugar free banana bread
* 2 cups all-purpose flour
* 1 1/2 teaspoons baking powder
* 1/2 teaspoon baking soda
* 1/2 cup unsweetened applesauce
* 1 cup Splenda sugar substitute
* 2 eggs
* 1 cup mashed banana
* 2 tablespoons orange juice or low-fat milk
Directions
1. Grease loaf pan.
2. I usually just add all the ingredients together and mix.
3. Bake in a 350°F oven for 45 to 50 minutes.
4. Bake until toothpick inserted in center comes out clean.
5. Store at room temperature up to 3 days or in refrigerator up to 1 week.

Vegan Banana Bread Recipe
1/2 cup brown sugar
1/2 cup white sugar
1/2 vegan margarine or butter (my favorite is Earth Balance)
3 ripe bananas (mashed well)
2 cups flour
1/2 teaspoon baking soda
1-2 apples, finely chopped
1/4 cup soymilk, mixed with
1 teaspoon apple cider vinegar
1 teaspoon vanilla
1 1/2 - 2 teaspoons cainnamon
1/4 teaspoon allspice
1/2 teaspoon salt
1. Preheat oven to 350 F
2. Spray an 8x4 bread pan with non-stick cooking spray
3. In a small bowl sift together flour, baking soda, salt and spices.
4. In another medium sized bowl cream together the butter and sugars. Add bananas, apples, soymilk mixtures and vanilla
5.add the dry ingredients to wet and mix well.
6. Pour batter into pan and bake for 1 hr. and 10 min. - 1 1/2 hrs.

Ingredients
* Cinnamon, ground, 2 tsp
* Applesauce, unsweetened, 1 cup
* Banana, fresh, 4 medium (7" to 7-7/8" long) Mashed
* Baking Powder, 1 tsp
* Baking Soda, 1 tsp
* Granulated Sugar 1/2 Cup
* Flour, white 2 cups
Preheat Oven 350 Degrees
Put Bananas in a bowl and mash them.
Add Applesauce, Cinnamon, Baking Soda, Baking Powder, and Sugar. Mix well.
Add flour and mix. The Batter should be quiet thick.
Spray Bread Pan with Canola Oil Spray and add batter to pan.
Put in Oven and Bake for 60 Minutes or until toothpick comes out clean.
Let cool or eat warm. Enjoy !! I hope you Like this recipe as much as my family and I do !!

1 1/4 cups sugar

1/2 cup fat-free cholesterol-free egg product
1 1/2 cups mashed very ripe bananas (3 to 4 medium)
1/2 cup buttermilk
1 teaspoon vanilla
2 1/2 cups Gold Medal® all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts, if desired

1. Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350ºF. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches, or 1 loaf pan, 9x5x3 inches.

I had gotten a version of this recipe and made some changes to make it a bit healthier. My kids love this!
Cream Cheese Banana bread
1/2 c. sugar/ 1/2 c. brown sugar
1 (8oz) pkg 1/3 less fat cream cheese, softened (or can even use fat free)
2 ripe bananas
1/2 c. eggbeaters (or 2 whole eggs)
2 cups of Aunt Jemima whole grain pancake mix (or you can use 1 c. whole wheat flour, 1 c. old fashioned oatmeal, 1 tsp. baking powder, 1 tsp. baking soda, and dash salt)
3 T. cocoa powder (optional, my kids love that they look more chocolatey!)
1/2 c. mini semi-sweet chocolate chips (optional)
Cream sugar & cream cheese in bowl. Beat in bananas & eggs. Add in dry ingredients & mix well. Add choc. chips, (and you can also add in walnuts, flax, and wheat germ if desired.)
Pour into 5 x 9" pan. Can also be made into muffins. (only cook about 20 min though if making muffins!)
Bake at 350 degrees for 55 min- 1 hour or until done. (and I almost always make a double batch, it goes fast!)

If you really love your mom's recipie, try substituting some plain applesauce for some of the oil. You can usually do at least half and sometimes all of it without noticing any difference. This alone will really help with the calories. Also if it takes a lot of eggs, try cutting one out - usually doesn't make a difference either.0

I'm with mommyskis - and I think you're safe cutting out all oil and replacing it with applesauce (unsweetened). I follow the Betty Crocker recipe for banana bread and do that as well as: cutting the sugar in half (the applesauce adds sweetness) and substituting whole wheat pastry flour for the white flour. I also double the cinnamon and add about a tablespoon of almond extract for extra (calorie free) flavor. Shredded coconut (all natural/no sugar added) is also a yummy addition. It's easier for me to make in muffin tins instead of a bread pan - that helps me to control my portions after it's done. It also cuts the cooking time in about half. It's healthy enough that I'll have a muffin or two for breakfast - they're great to grab and go - and my 4 yr. old loves them too0
