How to make the leap from health to fit?

Hello, friends!
I am proud of the progress I have made in a year. Last summer I lost 25 pounds and have kept the weight off for almost a full year now. :happy: But I have clearly reached a plateau. I am definitely healthy, at a weight of 130-133 (depends on the day) and height of 5'4". But what I really want is to be FIT. I have a treadmill, an elliptical, free weights, a medicine ball, a large exercise ball, a boflex machine, a pull up bar, etc. I also live very close to a pool and love going on long walks. I tried to do P90X earlier this year but found it tedious and boring. What kind of routine can I get into to really start noticing change in my body again. I am bored with being normal, I want to feel strong. :glasses:
So this is for all my hardcore MFPers out there. How do you schedule your cardio and strength training? I am pretty sure my eating is on target for the most part. I am eating vegan and pretty clean/raw stuff.
Any advice to help me bust out of this plateau and start noticing some muscle definition and toning up would be great.
(please keep in mind my knees and hips are not in the best of shape so running on concrete for long distances or jumping a lot is kind of a no go.)

Also I meant to make the title of this thread make more sense. I mean, how to go from being just "healthy" to being really in shape.0
