Lunch Time at Work

Whats everybody eating?

I work in a professional building and we have all the amenities of a fridge and a microwave and anything else we need. But all I can think to eat is sandwich and salads.

So my question is what do you guys take to lunch?
Give me recipe and snack ideas as well

    I'm not fond of hard boiled eggs but some of my co-workers are. They seem fairly easy to manage with some veggies and cheese.

    I make seaweed and cucumber salad often, or a cous cous salad, houmous and veggies to dip in it, sushi, tuna or egg salad, left overs from the night before! I like to change it up otherwise It gets boring. I also have a fruit bowl on my desk so it I get peckish there is always something to hand.

    I use the same template of sort for packing my "lunch". I almost always pack some form of meat (pork chop half way cut up, chicken, fish, mussles, beef), veggies (carrots, squash, cucumber, peppers, tomatoes, maybe lettuce), fruit (strawberries, blueberries, watermelon, grapes) and then protien bar, baby bell cheese, and yogurt.

    I cook in bulk over the weekends which is when I decide want meat or meats I'm eating for lunch and in what form. Sometimes stews, maybe fajitas, salmon & broccoli, pork & sqaush, chicken & carrots, stuffed peppers... It pretty much comes down to some form of veggy & meat dish and then I always try to find fresh fruits on sale. Recipes are whatever I find online to fit my main ingredients, lol. Sometimes they come out amazing and sometimes I have to 'fix it'. It's all basic veggy, meat, seasoning though. :-)

    I snack through the day some days which is why I bring so much. Usually I snack on the fruits, protien bar, and baby bell cheese, where as the meat, veggies, and yogurt are what I actually eat during lunch time.

    Broth soups - Chicken Noodle is my favorite.

    Low Carb/Cal tortillas (La Banderita brand has 81 calories and 11 carbs) with anything you want. You can use these as sandwich wraps, tacos, enchiladas.pizzas, quesadillas, etc...

    Fresh fruit cut up with mixed with low calorie yogurt.

    Carba Nada Pasta (140 calories and 24 carbs for 1.5 cups of pasta) with a mango salsa (Costco brand 1/4 cup has 25 calories and 3 carbs) or low calorie topping.
