what to do with pumpkin?

I use pumpkin is veggie stir frys a lot. Just chop it up in cubes and cook it in a bit of oil with whatever mixture of other veg you have around and add in some spices. I usually serve it over brown rice.
Also, I sometimes cheat and as pumpkin takes awhile to cook i will microwave it a bit first so its a bit quicker0 -

Then of course you can always puree it and use it as a ravioli filler, or do a risotto with it. And don't forget you can freeze whatever you don't use now, and use it later!0 -
You could use it to make oven-baked chips? Only with pumpkin in place of potato!
Sometimes I even make vegetable curry with pumpkin! You just use the regular curry powder/mix and add in some chickpeas, broccoli, corn, and large chunks of pumpkin. It tastes amazing! I think it's one of Jamie Oliver's 30-minutes meals.0 -
Peel, thin slice, season with salt pepper and olive oil and roast for about 10 minutes. Once soft, add to any salad. It's sweet tasting, and adds an interesting new texture to salads.0

boil it, mash it and put it in smoothies or oatmeal.

Take out the seeds, fill it with goodies, bake, slice, enjoy! What pumpkin is it? What I normally do with: Gem Squash, fill with left over minced meat (minced beef with garlic, tomato etc like a beef sauce.) Or butternut squash, I fry onions, like it lean bacon, garlic, peppers, then take out the pips and fill with all the goodies and bake. If its a big pumpkin, like a halloween pumpkin (not sure what they are called) I also mix a whole lot of stuff, but I add an egg just to firm it up, then I slice of the top of pumpkin (like a lid) take out seeds, fill with mixture of veg, low fat bacon etc and put top back on, rub with olive oil, and bake for about an hour and a half... Its devine!0
