  • We had bison burgers 2 nights ago, and they're great. We first tried it a few months ago, and I don't think we'll ever go back! Mix it with some Lipton Onion Soup Mix and a little worcestershire sauce and you can't go wrong.

    It tastes very similar.............

It is more lean than beef, so you will want to cook it in some type of fat (olive oil, bacon grease, rendered lard, coconut oil) and cook it on a lower heat or it will dry out terribly bad and be very tough.

    So cook in fat
cook slower and lower heat so it doens't dry out

    Taste really, really good!!!

It does to me, maybe a "richer" flavor would be my description - I frequently use it in place of ground beef. It has much less fat so depending on how you are cooking you may need to add some, such as olive oil to help keep it moist. Hope you like it.

Thanks so much everyone !!!!!! I'll cook it in an olive oil coated pan. I may try some onion soup mixed in too. The Bison we have is 90/10 and it has 11 grams of fat in it. I usually buy very lean hamburger so it has less fat in it than this Bison. I'll let you know how it turns out. Cindy

Cindy I make Italian bison meatloaf that is yummy! (Sis doesn't like the traditional meatloaf)

    1 lb ground bison(90/10)
1/2 cup your favorite marinara or spaghetti sauce (I use TJ's Tuscany Marinara)
    2 eggs
1 zucchini chopped small (really any veggie you want to add, grated carrot would be good too)
2 TBSP or so chopped onion

Combine all and bake until done and browned well on top. You can top with more marinara I eat it with steamed spaghetti squash for a low carb dinner. Add some grated parmesan for a little extra flavor.

Tacos are also great with bison. I just use an all natural taco mix and some onion then cook according to directions.

Please try cooking without additional fat first. I stand over it, stirring constantly, and have no problem with it being dry. It is so much better for you, and tastes as good (I think it is actually better) The only drawback is the price. I have to get mine online, since I have not found a local store.

We also cook with ground bison and actually never eat beef anymore. But I agree with PP that when we cook it, we've never needed to add fat to cook it in. Try it without the oil first, and if it's drying up then add a bit.

Hi everyone , I made those Bison burgers last night. I did not add oil or any other fat while cooking them. I liked the Bison but not enough to buy it again. I buy 96% lean hamburger and thats what I'll stick too. Cindy
