Lookin for PB2 - need recipes/ ideas -- vegetarian.. thanks!

Hey guys!

I have PB2 all the time as peanut butter on crackers, toast, apples, etc...
Looking for recipes for low cal sweets/ desserts or other creative things to do with it...
I am a vegetarian, so non-meat would be best... not vegan so eggs and dairy are fine :)

    I love to make 1 1/2-minute PB2 Muffins! They aren't super sweet, so add natural sweeteners as you please.

    Ingredients:
    1 Large Egg White
    1/2 Packet of Quaker Original Instant Oatmeal
    1-2 Packets of Stevia (depending on how sweet you like things)
    2 TBS PB2 (prepared)
    1-2 TSP Cinnamon (optional)

    Directions:
    In a coffee mug, add all ingredients and mix together until nice and smooth.
    Place in microwave for one minute, keeping an eye on it to make sure it doesn't overflow or overcook.
    Once complete, check to see if it's fluffy but slightly firm on top. If not, keep heating for 15 seconds at a time.
    Remove cup from microwave, turn the mug over onto a plate and let your PB2 muffin fall out. Enjoy!

    Per Serving:
    Calories: 118
    Carbs: 19
    Fat: 3
    Protein: 13
    Sugar: 2
    Fiber: 5

    However, it's a peanut butter powder where all the oils have been removed, making it 85% less calories AND fat calories. All you have to do is add water. It's amazing. 2 TBS = 45 calories, compared to the average Peanut Butter which is 200 calories per 2 TBS.

    Honestly, one of the best things to discover. If you love peanut butter, buy this!

    I put a banana in the freezer until its firm then coat it with a serving of chocolate PB2 then freeze that baby for dessert. AMAZING and comes in around 150 calories, depending on the size of your banana.

    I love to mash 2 bananas with 3 T of PB2 and then spread the mixture between graham crackers and freeze it. SO delicious. OR, forget the graham crackers and freeze the mixture in foil, then unwrap it and eat little pieces of it at a time. MMMM.

    I also love to melt dark chocolate, mix PB2 in it, then freeze that mixture!

    I also like to use almond milk instead of water when I mix it, and then add a half T of maple syrup and spread it on pancakes or pancake-like foods.

    Sounds soooo yummy! This I gotta try! Thanks for sharing! ..... Question though - approx how many tbsp of the oatmeal are you using? I use the 3 minute bag and would like to measure out the oatmeal flakes from that. Thanks! :)

    For something very quick and easy, in blender mix 2 - 3 TBSP PB2 or Chocolate PB2 with approximately 1/3 cup almond, soy, rice or skim milk. Blend until mixed then add one frozen banana. Add milk as necessary to make soft serve consistency. Tastes like peanut butter and banana ice cream.

    Love PB2...try dashingdish.com. She has a few recipes that use peanut flour (PB2) - protein bars, blondies. Some of the recipes require membership to view but it's totally worth it!

    Got the regular, but the store attendant made me a protein shake with the chocolate so I've now tasted both and they are both amazing! So glad I saw this thread!
