Spiced Pumpkin Cake
Makes 4 servings

1/2 tsp. cinnamon
1/2 tsp. nutmeg
dash each ground cloves and salt
2 eggs, separated
1/4 c. canned pumpkin

artificial sweetener to equal 6 tsp. sugar
Note: I don't use sweetener but use 4 tsp. honey
1 tbsp. plus 1 tsp. vegetable oil

dash cream of tartar

Preheat oven to 325 F. Sift first 5 ingredients into bowl. Add egg yolks, pumpkin, water, sweetener, oil and orange rind; beat until smooth. • This sounds great but what size loaf pan do you use? There are so many sizes!

    Thanks,
