Spiced Pumpkin Cake
Spiced Pumpkin Cake
Makes 4 servings
1/2 c. plus 2 tbsp. enriched flour
1 1/2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
dash each ground cloves and salt
2 eggs, separated
1/4 c. canned pumpkin
3 tbsp. water
artificial sweetener to equal 6 tsp. sugar
Note: I don't use sweetener but use 4 tsp. honey
1 tbsp. plus 1 tsp. vegetable oil
1/4 tsp grated orange rind
dash cream of tartar
Preheat oven to 325 F. Sift first 5 ingredients into bowl. Add egg yolks, pumpkin, water, sweetener, oil and orange rind; beat until smooth. In separate bowl beat whites with cream of tartar until stiff peaks form; gently fold into pumpkin mixture. Transfer batter to nonstick loaf pan that has been sprayed with cooking spray; bake for 40 minutes or until toothpick comes out clean.
Per serving: 157 calories (if using honey add in the amount of 1 tsp. honey) 5 g protein, 8 g. fat; 16 g. carbohydrate, 321 mg. sodium

This sounds great but what size loaf pan do you use? There are so many sizes!
