51 calorie brownies
Banana coco-brownies
Ingredients:
1 cup quick-cooking oats
1 cup boiling water
4 egg whites
1-1/2 cups mashed ripe bananas (about 3 medium)
3/4 cup packed brown sugar
1/2 cup sugar
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
Directions:
In a bowl, combine oats and boiling water; let stand for 5 minutes.
In a mixing bowl, beat egg whites, bananas, sugars, oil and vanilla until blended.
Combine the dry ingredients; gradually add to creamed mixture.
Stir in the oatmeal mixture.
Spread into a 13-in. x 9-in. x 2-in. pan coated with nonstick cooking spray.
Bake at 350 for 20-25 minutes or until a toothpick inserted near the centre comes out clean (do not overbake).
Cool on a wire rack.
Cut into bars.
YIELD: 4 dozen

I think I'll try these this weekend - I bought too many bananas this week anyway!
Blakgarnet - I'm gonna use whole wheat flower, and am pretty sure it will work just fine. I recommend using whole wheat PASTRY flour cause it is definitely fluffier. I'm also gonna substitute applesauce for the oil!0 -

48 brownies out of a 13x9x2 pan? That's a small portion size. Each brownie would be barely bigger than 2"x1". I have a feeling I'd be eating 102 calorie brownies with this recipe! :laugh: But even 102 calories isn't so bad for a special treat!0 -
Wow thanks for the recipe. We have brownie night every Wed. at my house. That will really come in handy for me. Now I can eat brownies instead of watching everyone else enjoying while I am drooling. :happy:0

12 brownies on the 13" side, 4 brownies on the 9" side. They're about 2"x1" each. As I said in my earlier post, I'd be having 102 calorie brownies. But they do seem delicious and I'm sure I'll be trying them.0 -

I made these brownies almost exactly like the recipe called for. The only thing I changed was I substituted a 1/4 cup of melted Smart Balance Butter Blend in place of the oil.
Anyway, they turned out good. I wouldn't say they are excellent, but moist and a good balance of chocolate and banana. I do have the recipe saved under 'stephcheers' if you want to search them that way. I did my own calculations using the Sparkpeople site. I calculated the recipe to have 24 bars and that is a very reasonable size for the 9x13 cookie sheet I baked them in.
I came up with 95 calories per brownie and 1g of fat.
If you have bananas browning on your counter like I did....this is a great change from the ordinary banana bread.0 -

I'm glad someone was able to come up with calories for the reasonable size brownie! I still don't think 95 calories for a brownie is too bad. I'm glad they were good; sorry they weren't excellent. I think I"m going to try to make them tomorrow or Saturday- but I am going to make them with your recipe!! Thanks again for the follow up!!0 -
