Awesome Easy Chicken Fried Rice!
So, I found this recipe on allrecipes.com and made it tonight... SO GOOD! I'm definitely going to be making it fairly often! I'm planning on adding some veggies in next time to bulk it up and add some extra nutrition, but it was definitely good on its own.
Ingredients
1 egg
1 tablespoon water
1 tablespoon butter
1 tablespoon vegetable oil
1 onion, chopped
2 cups cooked white rice, cold
2 tablespoons soy sauce
1 teaspoon ground black pepper
1 cup cooked, chopped chicken meat
Directions
In a small bowl, beat egg with water. Melt butter in a large skillet over medium low heat. Add egg and leave flat for 1 to 2 minutes. Remove from skillet and cut into shreds.
Heat oil in same skillet; add onion and saute until soft. Then add rice, soy sauce, pepper and chicken. Stir fry together for about 5 minutes, then stir in egg. Serve hot.
Amount Per Serving Calories: 255 | Total Fat: 10.2g | Cholesterol: 90mg

I just baked the chicken and made the rice in the morning, popped them in the fridge and threw the rest together right before dinner. So easy and SO good!!

I just made this & LOVE it!!!!!! I used brown rice instead of white & peas instead of peppers. I don't cook & this was SO easy. THANKS FOR THE RECIPE!!! One problem, I will never eat just one serving!!0

I just whipped up another batch with some leftover chicken in the fridge, was out of onions so I had to skip them and it was STILL amazing!
