Some calorie questions (Keep undershooting daily target)

Hello!
Just a quick background..... I'm a 35 year old male, 284 lbs. I started MFP a few weeks ago and between the drastic change in my diet and my biking I need to make sure I am doing this right.
MFP tells me for my weight loss goals I am aiming for 2120 calories for the day. My problem is I keep netting 1300-1700 after bike riding. I usually do 10-12 miles a night on my mountain bike which is always 800-1000 calories.
My issue is at the end of the day i'm full and still sitting at over 700 calories short of my daily goal. I know if I do this too often or get it too low it can slow down my metabolism.
What would be some good "filler foods" that I can supplement my diet with to ensure I don't stall out? Would it be bad to double the size of my "after workout" protein shake if I have already met my protein target for the day?
I guess I find it all a little frustrating because I went from eating whatever when ever to really micro managing it. I don't mind the micro managing however there is a ovewhelming amount of information out there and sometimes finding answers to questions is a frustrating as the problem itself.

nuts are good, and things like apples are not filling but still score.
the protein shakes are pretty filling for the cals so don't help if you want to eat more cals.0 -

I have the same problem. Its hard to eat enough healthy calories without feeling stuffed! I have been putting peanut butter on my apples to add some good calories and making my shakes with milk to help out too. When i dont eat enough calories my weight loss comes to a hault so I try to make sure I stay where I need to be calorie wise and its been working for a few months now. Nuts are great and I also add some extra virgin olive oil where I can too....Good luck:)0
